Floor Manager / Head Waiter / Waitress

As a Floor Manager you are an important member of the team and you will report to the Supervisors. 

The Head Waiter will have the most contact with the customer during their dining experience; therefore it is essential that the Head Waiter is polite and courteous when welcoming guests into the dining room, during the service of the meal and must always remember tot hank guests when they leave. 

Any queries or question a customer may have, which the Head Waiter cannot answer should be passed on to a Supervisor. 

 
It is extremely important that the Head Waiter works as a team member, provides polite and efficient service at all times, in order to maintain the exceptional standard of service and quality that is required and coordinates the food service activities in the lounge.

Responsibilities:
  • Explains how various menu items are prepared, describing ingredients and cooking methods
  • Informs customers of daily specials, making recommendations upon request
  • Serving & Clearing dishes, making sure the crockery is clean & polished before use
  • Assisting in inventory for crockery, cutlery, linens etc for the restaurant
  • Assisting customers in all their needs (ie. calling a taxi)
  • Be responsible for all work stations and for the uniforms
  • Required to attended mandatory training sessions, restaurant meetings and briefing
  • Responsible for coordinating entire stations and communicating with front- and back-of-the-house personnel to provide a dining experience that meets or exceeds guest expectations
  • Processes guest orders to ensure that all items are prepared properly and on a timely basis
  • Present, open, and pour wine when serving guests
  • Observes diners to ensure that guests are satisfied with the food and service
  • Responds to additional requests and determines when the meal has been completed
  • Preparing totals bills and accepts payment or refers guests to cashier
  • Assist bus person with stocking, removing, and resetting dishes and silverware between courses and cleaning and resetting tables
  • The Head Waiter ensures that restaurant and lounge operate efficiently and profitably while maintaining their reputation and ethos
  • Maintaining high standards of food, service, health and safety
  • Investigates and resolves food quality and service complaints
  • Coordinating the operation of the lounge during scheduled shifts
  • Managing and motivating staff throughout their shift and provide them with feedback
  • Carrying out inventory of the bar, cutlery, crockery, glassware, equipment at regular intervals to ensure minimal loses due to theft and breakage
  • Ensures that the team demonstrate the highest standards of guest care and welcome in the bar/lounge
  • Assumes all duties given by the Supervisors
Requirements:
  • A degree or diploma in Hotel Management or similar from a reputable college or university
  • Min. 5 years experience with a minimum of 2 years supervisory skills in fine dining establishment
  • Management experience
  • Basic wine knowledge
  • Right work attitude
  • Flexible
  • Strong social skills Should be a team player and willing to learn
  • Strong written and verbal communication skills
  • Strong organizational skills

  • Ensure that all items are dated on arrival
  • Ensure clean serving spoons into the salads, sauces, feta and olives
  • Check that there are sufficient side plates, bowls and cutlery
  • Prepare all salads, deli starters and sauces
  • Ensure that there is enough take away containers for the day
  • Clean and sterilize all knives and cutting boards
  • Follow weekly and master cleaning schedules for deli section
  • Take salads out of cold room, remove plastic and check for freshness and quality.
  • Ensure that your deli display looks appetizing and clean
  • Ensure that you are wearing the correct uniform and that it is clean and neat
  • Place salads in Deli fridge with a serving spoon
  • Ensure enough cut feta according to specifications
  • Check sauces: Tartar, Garlic, and Chili. Remove from containers, wash and dry and refill sauces.
  • Check that there are no watermarks on side plates, bowls and cutlery and that there are sufficient.
  • Tartar sauce – prep as needed.
  • Check that there is enough take away containers for salads and sauces
  • Ensure that Calamari salads are prepped for the day.
